I’m currently loving the nakd food bars range and was inspired to create my own version of the raw sweet treat. This went down a bomb, especially with me. I ate six before I finished even making them. My nephews loved them and my Companion Man told me I ‘should sell these’.
They will make a lovely gift for someone also, just pop them in a box with some crepe paper and viola!
Enjoy getting down and dirty with these super nutritous sweets.
180g Medjool dates, stones removed and halved
180g Cashew Nuts
1 tablespoon raw cacoa powder
1 tablespoon of honey OR melted coconut oil
Large handful of desicated coconut for covering the truffles
Put cashew nuts into food processor and blend.
Add dates, raisins and cocao powder to the cashews and whizz until its finely pulsed.
Pour in honey/coconut and whizz again until all the ingredients bind together.
On a chopping board, sprinkle over the desicated coconut.
Form little balls with the mix and then roll on the chopping board until covered in coconut.
Try not to eat them all as you make them…
Oh and by the way – it gets messy…..
